Yee Sang

This is a very popular dish eaten during Chinese New Year.
To make this dish you need to do a lot of cutting and peeling.
To start make sure you use a very sharp knife.

Ingredients: Fruits & Vegetables

1 raddish (white carrot)
1 nashi pear
1 medium size cucumber
2 carrots
1 “sargort” (chinese white turnip)
young ginger
Lots of fresh corriander leaves
1 green apple
you can also add honey dew melon (optional)
pickled ginger
pickled leek
4 kaffar lime leaves.

Wash and dry all above ingredients.
Slice finely and leave aside till ready to plate up.

Ingredients: Fish

Fresh salmon, tuna or smoked salmon (thinly sliced)
Mix the fish with:
1/2 tsp five spice powder
1 tbs brandy
lime juice to taste

Ingredients: Sauce

Mix the following together:
1/2 bowl apricot jam
1/2 bowl plum jam
2 tbs honey
lime juice to taste

To plate up:

Arrange the sliced vegs and fruits ingredients in small heaps on the edge of a big round platter.

Arrange the sliced fish in the middle of the platter.

Sprinkle with crushed peanuts and sesame seeds.

For more crunch, deep fry some wontan skin or use some cornflakes to sprinkle on top.
Add sauce and mix well.

Traditionally the mixing (with chopsticks) has to be done at the same time by everyone seated at the table.

More lime juice can be added to suit your taste.
